Pickled Red Onions

Ingredients:

1 large red onion, thinly sliced

1 cup white vinegar

1/2 cup water

1 tbsp sugar

1 tsp salt

1/2 tsp peppercorns (optional)

1 bay leaf (optional)


Instructions:

Place the sliced onions in a jar or airtight container.

In a saucepan, combine vinegar, water, sugar, salt, and optional spices. Bring to a boil, stirring until sugar and salt dissolve.

Pour the hot brine over the onions, ensuring they are fully submerged.

Let cool to room temperature, then refrigerate for at least 1–2 hours before serving.

Store in the fridge for up to 2 weeks.
