Spicy Aubergine Saute


Ingredients

3 lg aubergine (melongene)

2 lg white onions

6 red pimentos

1 lg green pepper

1/4 tsp cayenne pepper

Salt to taste

1/4 tsp onion powder

Oil for frying


Method

1.Wash the melongene and pat dry.

2.Cut into desired pieces.

3.Chop onion,sweet pepper and set aside.

4.The pimentos and parsley are used for garnishing

5.Place hot oil in a skillet,and fry pieces and place on parchment paper.

6.When all frying is complete,place in a serving pan ,add other ingredients, adjust taste,garnish and serve with basmattie rice.

This is a vegetarian dish

    

Substitute Plantains and omit the cayenne pepper

Enjoy the flavour.
