Smoky Jalapeño Popper Meatloaf with Creamy Ranch Drizzle

Ingredients:

For the Meatloaf:

1 lb ground beef

1 cup breadcrumbs

1/2 cup milk

1 large egg

1 small onion, finely chopped

2 cloves garlic, minced

2 jalapeños, seeded and finely chopped

1 cup shredded cheddar cheese

2 tablespoons smoked paprika

1 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon black pepper


For the Creamy Ranch Drizzle:

1/2 cup ranch dressing

2 tablespoons sour cream

1 tablespoon chopped fresh chives


Instructions:

1. Prepare the Meatloaf:

Preheat your oven to 375°F (190°C).

In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, finely chopped onion, minced garlic, chopped jalapeños, shredded cheddar cheese, smoked paprika, ground cumin, salt, and black pepper. Mix until well combined

Shape the mixture into a loaf and place it in a greased baking dish.


2. Bake:

Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (70°C).


3. Prepare the Creamy Ranch Drizzle:

In a small bowl, whisk together the ranch dressing, sour cream, and chopped fresh chives until smooth.


4. Serve:

Allow the meatloaf to rest for 10 minutes before slicing. Drizzle the creamy ranch mixture over the top and garnish with additional chives, if desired. Enjoy this smoky and flavorful meatloaf!
