Saltfish & Kale Accra

Presented By Nalini Harrilal‎ Saltfish and Kale Accra : Ingredients : 1 packet of boneless Saltfish (scalded and flaked very finely) 3 1/2 cups of flour 2 teaspoon of baking powder 1 packet of instant yeast A mixture of finely chopped /minced seasoning consisting of (chive, thyme, parsley, garlic, pimentoes and hot pepper) 1 finely chopped onion 1 egg (this is optional though I like using it as it gives a light and fluffy texture) Avg 8 to 10 leaves of Kale (Stem /veins removed and finely chopped) Salt Black pepper Sprinkle of Cayenne and paprika powder Warm water Vegetable oil Directions : Combine the mixture of flour,baking powder,yeast, flaked, scalded saltfish, salt, black pepper, cayenne, paprika, black pepper, minced seasoning mix, egg, finely chopped kale and onion. Add warm water to the mixture forming a batter like texture. Let the mixture proof for about 45 mins. Add oil to a deep frying pan or wok, when it's ready, drop spoonful of Accra in and deep fry until golden brown and drain on paper towels to absorb excess oil.
