Mango Jam

5 full green mango cut up and washed... not too sour... skin on.

3 tbsp liquid colouring or more

3 cups sugar or less or more. Average to taste..

5 cloves optional

4 bay leaves

1/2 tsp salt..

2 cups water.. put all ingredients in a heavy pot on medium flame and boil turning only once or twice till mango is red. Let sit for a few hours to soak
