Bruschetta Pasta Salad


4 Servings

2 cups rotini

3-4 medium tomatoes, seeded and chopped

1/4 cup fresh basil, thinly cut strips

1 tablespoon olive oil

1 tablespoon lemon juice

3 garlic cloves, minced

1/4 teaspoon salt

1/4 teaspoon pepper

3 cups baby spinach

1 cup shredded mozzarella cheese


Cook rotini pasta according to the directions on the package. Drain and rinse pasta with cold water.

While rotini is cooking, chop the tomatoes and slice the basil.

In a small bowl, mix together the olive oil, lemon juice, garlic, salt and pepper to create vinaigrette.

In large Salad bowl toss together the vinaigrette with the rest of the ingredients

Refridgerate until ready to serve
