Ingredients:

  • 1 cup long-grain rice (like basmati or jasmine)

  • 2 cups vegetable or chicken broth

  • 1 cup mushrooms, sliced (button or cremini)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil or butter

  • 1 teaspoon thyme (fresh or dried)

  • Salt and pepper to taste

  • Fresh parsley for garnish (optional)

Instructions:

  1. Sauté Aromatics: In a large skillet, heat olive oil or butter over medium heat. Add the diced onion and garlic, and sauté until the onion is translucent.

  2. Cook Mushrooms: Add the sliced mushrooms to the skillet and cook until they are browned and tender, about 5-7 minutes.

  3. Add Rice: Stir in the rice, cooking for another minute until the rice is lightly toasted.

  4. Add Broth and Season: Pour in the broth, add thyme, salt, and pepper. Bring to a boil.

  5. Simmer: Reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

  6. Fluff and Serve: Remove from heat, fluff the pilaf with a fork, and garnish with fresh parsley if desired.

A flavourful side dish perfect for any meal!
