Ingredients

  • Pork: 3 to 5 lb boneless pork shoulder or pork butt

  • Dry Rub: 1 tbsp salt, 1 tsp black pepper, 2 tsp dried oregano, 2 tsp cumin, and 2 tsp chili powder

  • Aromatics & Liquids: 1 large onion (sliced or diced), 4 to 5 minced garlic cloves, juice of 1 lime, and 1/2 cup fresh orange juice

Instructions

  1. Season the Pork: Rub the spice mix all over the pork shoulder.

  2. Combine in Pot: Place the onions and garlic at the bottom of a slow cooker, Dutch oven, or roasting pan, and set the pork on top with the orange and lime juices.

  3. Cook Low and Slow:

    • Slow Cooker: Cook on LOW for 6–8 hours (or HIGH for 4–5 hours).

    • Oven: Cover tightly and roast at 325°F for about 3.5 to 4.5 hours until fork-tender.

  4. Shred and Crisp: Shred the pork using two forks. For crispy edges, spread the meat on a baking sheet and broil on high for 2–3 minutes.

  5. Serve: Spoon into warm corn tortillas with cilantro, diced white onion, salsa, and lime wedges, or serve alongside rice and beans.
