Ingredients for Chicken Croquettes

See the recipe card below this post for more ingredients quantities

Chicken Mixture

  • Vegetable oil (1 Tbsp): Keeps the chicken from sticking and helps it cook evenly. Just a small amount is all you need.

  • Ground chicken (1 lb): The heart of the filling. Ground chicken cooks quickly, breaks down into a fine, tender texture, and soaks up seasoning well.

  • Salt (½ tsp): Seasons the chicken as it cooks so the flavor goes all the way through.

  • Freshly cracked black pepper (¼ tsp): Adds gentle warmth and a little depth.

  • Garlic powder (½ tsp): Gives the chicken a warm, savory base that runs through every bite.

Sauce Mixture

  • Butter (2 Tbsp): The fat base for the roux. It gives the sauce richness and a smooth, slightly nutty flavor.

  • All-purpose flour (3 tablespoon / 30g): Cooked with the butter to make a roux, which thickens the sauce and gives the filling its creamy, cohesive body.

  • Milk (1 cup / 8 oz.): Whisked into the roux slowly to create a smooth, velvety béchamel-style sauce that holds the filling together.

  • Salt (½ tsp): Keeps the sauce from tasting flat. Season it well so the filling is flavorful all the way through.

  • Freshly cracked black pepper (¼ tsp): A little heat and balance in the sauce.

  • Garlic powder (½ tsp): Deepens the savory flavor and ties the sauce to the chicken seasoning.

  • Onion powder (¼ tsp): Adds a subtle sweetness and rounds out the overall flavor.

  • Dried parsley (¼ tsp): A faint herby note and a touch of color throughout the filling.

Breaded Coating

  • Vegetable oil (2 cups, for frying): Use a neutral, high-smoke-point oil for clean, golden results without any off flavors.

  • All-purpose flour (¼ cup / 40g): The first coating layer. It creates a dry surface that helps the egg wash stick properly.

  • Egg (1): The binding layer between the flour and the panko. It's what makes the crust actually adhere.

  • Water (2 Tbsp): Thins the egg wash so it coats the croquette evenly rather than pooling in patches.

  • Panko breadcrumbs (1 cup / 80g): The final coat. Panko is lighter and crispier than regular breadcrumbs and gives you that signature crunchy, golden shell.

How to Make Chicken Croquettes

Take your time with the chilling and freezing - they're what makes the difference between croquettes that hold together beautifully and ones that fall apart in the oil.

  • Cook the chicken: Heat 1 tablespoon of vegetable oil in a medium skillet over medium heat. Add the ground chicken, ½ teaspoon salt, ¼ teaspoon pepper, and ½ teaspoon garlic powder. Cook for about 8 minutes, breaking the meat apart as you go, until fully cooked and no longer pink. The chicken should be in small, fine crumbles. Remove with a slotted spoon and transfer to a medium bowl.

  • Build the sauce: Wipe the skillet clean and return it to medium heat. Melt 2 tablespoon butter, then add 3 tablespoon flour. Stir constantly for about 1 minute until the mixture looks smooth and smells just slightly nutty. Slowly pour in the milk, whisking continuously for around 2 minutes, until the sauce thickens and becomes glossy and smooth.

  • Combine and chill the filling: Remove the skillet from heat. Whisk in ½ teaspoon salt, ¼ teaspoon pepper, ½ teaspoon garlic powder, ¼ teaspoon onion powder, and ¼ teaspoon dried parsley. Pour the sauce over the cooked chicken and fold it all together until fully combined. Cover the bowl and refrigerate for at least 30 minutes until the mixture has cooled and firmed up slightly.

  • Shape and freeze: Using a ⅛ cup (2 Tbsp) measure, portion the chilled mixture into 14 oval-shaped croquettes. Gently roll and shape each one with your hands. Arrange them on a parchment-lined plate and slide them into the freezer for at least 2 hours. This freezing step is what keeps them intact during frying - don't skip it.

  • Prep your frying station: Heat 2 cups of vegetable oil in a medium pot over medium-low heat to between 350°F and 365°F. While the oil heats, set up your breading station with four containers - one with all-purpose flour, one with 1 whisked egg mixed with 2 tablespoon water, one with panko breadcrumbs, and one empty plate for the finished breaded croquettes.

  • Bread the croquettes: Pull the croquettes straight from the freezer. Working one at a time, roll each croquette in flour to coat it fully, dip it in the egg wash, then press it gently but firmly into the panko. Make sure the breadcrumbs cover the whole surface. Set each one on the empty plate.

  • Fry in batches: Carefully lower about 5 croquettes at a time into the hot oil using tongs. Fry for 2 minutes per side until they're deep golden brown and beautifully crispy. Transfer to a paper-towel-lined plate to drain. Keep the oil temperature steady at 350°F between batches - a thermometer helps a lot here.

  • Serve hot: These are at their absolute best straight off the draining plate while the crust is still crackling. Serve immediately.

Easy Substitutions

These swaps work well for chicken croquettes without changing the overall texture or flavor you're going for.

  • Ground chicken swaps easily for ground turkey. The texture stays very similar and the flavor is just slightly richer.

  • Panko breadcrumbs can be replaced with regular breadcrumbs in a pinch - the crust will be a little less crunchy but still tasty.

  • Milk can be swapped for an unsweetened plain dairy-free milk. Oat milk works well and doesn't compete with the savory flavors.

  • Vegetable oil for frying can be replaced with canola oil or any neutral, high-heat oil.

  • Dried parsley can be swapped for dried thyme or a pinch of Italian seasoning for a slightly different flavor.

Chicken Croquettes Equipment

  • Medium skillet

  • Medium bowl

  • Parchment paper

  • 4 medium bowls or shallow dishes (for the breading station)

  • Tongs

  • Medium pot or deep fryer

  • Paper towels for draining

  • Kitchen thermometer (helpful for monitoring oil temperature)

Storing Your Chicken Croquettes

In the fridge: Cooked chicken croquettes keep well in an airtight container for up to 3 days. To reheat, pop them in an oven or air fryer at 375°F for 8 to 10 minutes - that brings the crunch right back.

Freezing uncooked: After shaping and breading, freeze the chicken croquettes on a parchment-lined tray until solid, then transfer to a freezer bag. They'll keep for up to 2 months. Fry them straight from frozen and add about 1 to 2 extra minutes to the fry time.

Freezing cooked: Already-fried Chicken croquettes freeze well too. Reheat straight from frozen in the oven at 375°F for 15 to 20 minutes until heated through and crispy again.
