Roasted Egg Plant withYogurt and Herbs


Ingredients:

2- 8ozs Eggplants, washed in water and vinegar then halfed

Salt and Pepper for seasoning

Your Favourite Yogurt and Herbs coarsely chopped


Directions:

lightly season Eggplants with salt and pepper

Heat Grill between 350 to 400 degrees

grease grill lightly

Place the fleshy portion on the grill for 5 minutes and turn over for another 5 minutes

(Depending on variety you may have to grill for a few minutes more your choice)

Serve with Yogurt and herbs
