Jerk Roast Chicken



Ingredients


2 scotch Bonnet peppers


2 tbsp brown sugar


2 tbsp tomato paste


2 tbsp chilli powder


1 tsp nutmeg


1 tsp nutmeg


1 tsp salt


1 tsp coffee ( optional)


1 bouquet garney ( chopped)


2 tbsp soy sauce


6 cloves garlic ( minced)


1 tbsp ginger ( chopped)


1/2 cup warm water



Method


1.Blend all ingredients for marinade until thick and smooth.


2.Place pieces of seasoned chicken in a roasting pan coat with marinade and bake for 50 mins or until dark as seen on the picture.



Serve with potato salad or a dish of your choice.
