Broccoli Salad



INGREDIENTS

YIELD: 4 servings TOTAL TIME: 15 minutes PREP TIME: 5 minutesCOOK TIME: 10 minutes

1 large head of broccoli

6 slices bacon

1/4 lb red onion, diced

1/2 cup dried cranberries

1/2 cup sunflower seeds

1/4 cup goat cheese, crumbled

broccoli salad dressing

1/2 cup mayonnaise

1/4 cup plain yogurt


DIRECTIONS

Preheat the oven to 400 d. Add the bacon slices to a baking tray and cook for 15 minutes or until crispy. Papar towel dry bacon and cool.

slice off all the broccoli florets into small bite-sized pieces. Add to a large Salad bowl along with the red onion, dried cranberries, sunflower seeds and goat cheese.

Mix the mayonnaise and yogurt in a small bowl and stir together. Add the dressing to the Salad bowl and stir until everything is well combined.

Eat well
