Black Beans, Tomatoes & Avocado Salad


INGREDIENTS:

Servings -4 persons

2 large avocados (or 4 small), diced

3 Medium tomatoes, diced

1/2 red onion, thinly sliced

3/4 cup cilantro, chopped*

1 (15-ounce) can black beans, drained

3 tablespoons olive oil

2 tablespoons lemon juice

salt and pepper

a dash of cayenne or chili powder

DIRECTIONS:

Combine the avocados, tomatoes, onions, cilantro, and black beans in a large bowl. Drizzle the olive oil and lemon juice, season with salt and pepper and a dash of chili powder or cayenne. Gently toss salad. season to taste.

NOTES:

You can serve this salad with chips on the side

Parsley is a good substitute for cilantro
