Avocado, Cucumber and Tomato Salad


1 green bell pepper

1.large Ripe tomatoes ( cubed)

1 English cucumber

1-2 ripe avocados

1 TBSP Red wine Vinegar

1/8-1/4 cup Salad oil

1 lemon, juiced

salt and pepper to taste

2 TBSP fresh cilantro, Kale or parsley


Take 5 minutes to toss this salad together,

Chop your veggies, removing any seeds/skin/stems needed.

Seed or Seedless cucumber you can keep the seeds and skin on,

Whisk together oil, vinegar, lemon juice, salt, pepper, and fresh herbs of your choosing and pour over salad.

Toss to coat and feast

Recipe yields 4 small sides or 2 larger portions.
