Udon Salad


INGREDIENTS

Servings - 4 persons

10 ounces udon noodles

1 bunch green onions, chopped (about 1 cup)

2 small yellow pepper, diced into small pieces

2 small green pepper, diced into small pieces

1 cup cherry tomatoes, halved

2 cups spring mix lettuce

3 garlic cloves

4 tablespoons hoisin sauce

4 tablespoons rice vinegar

4 teaspoons sesame oil

4 teaspoons soy sauce

1 teaspoon wasabi paste

1 tablespoon agave syrup

2 tablespoon lemon juice


INSTRUCTIONS


Cook udon noodles according to package directions. Drain and rinse with cold water.

Use a large bowl, add all vegetables and lettuce. Add noodles and combine.

In a small bowl, add garlic, hoisin, rice vinegar, sesame oil, soy sauce,, wasabi paste, syrup and lemon juice. Stir with a whisk.

Add sauce and toss with noodles to combine.
