Ingredients:
4 cod fillets
2 tablespoons olive oil
1 onion, finely chopped
3 cloves garlic, minced
2 cups cherry tomatoes, halved
1 can (14.5 oz) diced tomatoes
1/2 cup fresh basil leaves, chopped
1/4 cup dry white wine
Salt and pepper to taste
Lemon wedges for serving
Instructions
Season the cod fillets with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the cod fillets and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the onion and garlic, and sauté for 2-3 minutes until softened.
Add the cherry tomatoes and cook for another 3 minutes until they start to break down.
Stir in the diced tomatoes, white wine, and half of the basil. Simmer for 10 minutes to allow the flavors to meld.
Return the cod fillets to the skillet and spoon the sauce over the top. Simmer for another 2-3 minutes to heat the fish through.
Serve the cod fillets with the tomato basil sauce spooned over the top and garnished with the remaining basil and lemon wedges.
