Fluffy Sweet Banana Pancakes

Ingredients

1 cup all-purpose flour

2 ripe bananas, mashed

2 tablespoons sugar

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract


Instructions

In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. Mix well to ensure all dry ingredients are evenly distributed.

In another bowl, mash the ripe bananas until smooth. Add the milk, egg, melted butter, and vanilla extract to the mashed bananas. Whisk together until well combined.

Pour the wet ingredients into the dry ingredients. Gently fold the mixture until just combined; be careful not to overmix. The batter should be slightly lumpy.

Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil if necessary.

Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.

Remove the pancakes from the skillet and keep warm. Repeat with the remaining batter, adjusting the heat as needed to prevent burning.

Serve the pancakes warm, topped with additional banana slices, maple syrup, or your favourite toppings.
