Fettuccine With Beet Sauce

Presented By NuPasta Vegetarian Serving: 1 Ingredients: 2 red beets 1 pack of NuPasta Fettuccine ¼ cup extra virgin olive oil 1 shallot, chopped 1 garlic clove, peeled ½ lemon, juice extracted 1 tbsp salted butter Salt and pepper, to taste 2 tbsp goat cheese 1 tsp parmesan cheese 1 tsp chopped parsley Directions: 1. Peel beets with a vegetable peeler. Wrap them in foil individually and bake for 40 minutes on 400 degrees F. When finished, unwrap and set aside to cool. 2. Drain, rinse and pan-fry 1 pack of NuPasta Fettuccine for 2-3 minutes. Set aside. 3. In a medium pan, heat olive oil on medium heat. 4. Saute shallot and garlic. 5. Add shallot, garlic, lemon juice, beets, and butter into a blender or food processor. Blend until all ingredients are combined, and texture is smooth. 6. Heat beet mixture in pan on medium heat for 3 minutes (or until desired temp). Mix in salt and pepper, to taste. 7. While on the heat, mix in NuPasta fettuccine, stirring to combine. 8. Plate the dish: top with goat cheese, parmesan, and parsley.
