Seafood Stew

Prepared & Presented By Idorenyin Ivy Udoh‎ Ingredients: 1 lb of mussels 1 lb of shrimp (peeled and deveined) 1 (8 oz) Cod filet 3 tbsp of olive oil 1 small red onion ( chopped) 1 garlic clove (minced) 1 can of stewed tomato 1 small can of crushed tomato 1 -1/2 cup of chicken broth 1/2 tsp of oregano 1/2 tsp of thyme 1-1/2 tbsp of fresh parsley (chopped) 2 bay leaves 1/2 tsp of dried basil 1 tsp of red pepper flakes Salt & Pepper to taste Instructions: In a large saucepan saute the onion, and garlic in olive oil until tender. Add the stewed tomatoes, crushed tomatoes, chicken broth, bay leaves, oregano, thyme, basil, 1 tbsp of parsley, red pepper flakes, salt, and pepper to taste. Bring to a boil. Add the cod, shrimp, and mussels. Reduce heat. Simmer covered for 10 minutes or until shrimp, and cod is opaque, and the mussel shells open. Garnish with the remaining parsley.
